Pea Cream Soup
Ingredients
- Potato 1 piece
- Snap Peas 2 cups
- Garlic 1 clove
- Carrot 1 piece
- Salt to taste
- Green onion tops 1 piece
- Parsley to taste
- Scallions to taste
- Semi-Smoked Sausage to taste
- 10% cream to taste
- Bay leaf 1 piece
- Croutons to taste
Step-by-Step Guide
Step 1
Pour 1.5 liters of water over the peas, add the smoked meats, and cook until partially cooked for 30 minutes.
Step 2
Add the carrot cut into several pieces, the whole onion, the potato cut into strips, salt, and cook for another 30 minutes.
Step 3
5 minutes before the end of cooking, add the bay leaf and other spices to taste.
Step 4
Let the soup steep for an hour until it cools slightly. Remove the smoked meats, bay leaf, and crushed garlic, then blend the soup.
Step 5
Add cream to taste, no more than 1/3 of the volume, return the cooked smoked meats, heat again, and serve the soup in bowls, garnished with chopped herbs.
Step 6
Optionally, sprinkle with croutons.
