Pastry 'Old Riga'
Ingredients
- Wheat Flour 5 oz
- Water ½ cup
- Milk ½ cup
- Chocolate eggs 4 pieces
- Butter 5 oz
- Salt a pinch
- Sugar a pinch
- 10% cream 5 fl oz
- Cottage cheese 15 oz
- Powdered Sugar 8 tablespoons
Step-by-Step Guide
Step 1
In a saucepan, combine water and milk, add butter, and place over heat.
Step 2
Meanwhile, mix flour with salt and sugar. Once the butter has melted in the milk and water, add the flour. Stir thoroughly (without removing from heat) until a thick, homogeneous dough forms that easily pulls away from the sides of the pan. Then, while mixing with a mixer, add the eggs (both whites and yolks) to the dough. The result will be a batter that is not too thick, resembling cream.
Step 3
Now, line a baking sheet with parchment paper and pipe 'roses' of dough onto it (with some space between them, as the dough will rise significantly) using a pastry bag. Place the baking sheet in an oven preheated to 430°F (428 degrees Fahrenheit) for 10 minutes. After this time, lower the temperature to 375°F (374 degrees Fahrenheit) and continue baking for 15-20 minutes.
Step 4
When the pastries are covered with a dense golden crust, remove them from the oven and cut off the 'tops' from each (not completely, they should be cut just halfway off the pastry). Allow them to cool.
Step 5
Meanwhile, prepare the cream. Blend the cottage cheese (non-sour and without lumps) in a blender and add 2 tablespoons of powdered sugar, mixing thoroughly. Whip the cream with a mixer. It’s best to place an empty saucepan in the freezer beforehand so it’s icy, which will help the cream whip better. When the cream becomes thick, add the remaining powdered sugar, then the cottage cheese. Place the mixture in the refrigerator for about 10 minutes.
Step 6
Transfer the cream to a pastry bag and fill the pastries. Now you can sprinkle them with powdered sugar and serve.
