Description

Pastry cream is a rich and creamy filling used in various desserts, such as éclairs, tarts, and cakes. It is made by combining milk, sugar, eggs, and flour, then cooking the mixture until it thickens. This versatile cream can be flavored with vanilla, chocolate, or fruit, making it a popular choice for pastry chefs in bakeries across America.

Ingredients

  • Milk ½ l
  • Whole egg 5 pieces
  • Sugar 1 glass
  • Wheat Flour 2 spoons
  • Vanillin ¼ spoons

Step-by-Step Guide

Step 1

Beat the eggs or egg yolks with sugar, then add flour and mix. Gradually stir in cold milk, then place the mixture over heat and cook, whisking with a whisk or fork. When it comes to a boil, remove from heat and add vanilla.

Step 2

If the cream is not used immediately, it should be transferred to a porcelain bowl, leveled off at the top, and pieces of butter placed on top (to prevent a skin from forming) or sprinkled with sugar.
