Description
You can use passion fruit curd to make a Pavlova cake, tart, macarons, or simply spread it on fresh bread for your morning coffee. It can also be stored for a long time if the storage jars are sterilized with hot steam, making it a wonderful gift.
Ingredients
- Passion Fruit 8 pieces
- Whole egg 5 pieces
- Sugar 2 tablespoons
- Butter 1 tablespoon
Step-by-Step Guide
Step 1
Make a puree from the passion fruit. Wash the fruits, cut them in half, scoop out the contents with a spoon, and strain it through a sieve. Add a third of the remaining seeds to the puree. They will provide a nice crunch, just be careful not to add too many.
Step 2
Take large eggs at room temperature and separate the yolks. Mix them with the sugar and passion fruit puree. Heat the mixture over medium heat until the yolks begin to thicken and lighten in color, whisking constantly. Cook for about 15 minutes. Then remove from heat and whisk in the butter until melted. Place the finished curd in the refrigerator until the butter sets. The quantity of ingredients is enough for 1 cup of the finished product.
