Parsnip Soup with Ginger
Ingredients
- Carrot 2 pieces
- Onion 2 heads
- Celery salt 2 pieces
- Parsnip 30 oz
- Ginger 0 oz
- Garlic 2 cloves
- Olive Oil 0 fl oz
- Cilantro to taste
Step-by-Step Guide
Step 1
Peel the carrots and cut them into large pieces, carefully remove the outer skin from the celery using a knife or vegetable peeler and also cut it into large pieces. Peel and chop the onion. Peel and mince the garlic. Peel and chop the parsnip and ginger.
Step 2
Place a large pot on the heat, warm the olive oil in it, and add the vegetables. Stir with a spatula and cook covered for about 10 minutes until the vegetables start to brown.
Step 3
Pour about 1.8 liters of water over the vegetables, bring to a boil, and cook for about 10-15 minutes until the vegetables are tender. Blend the finished soup with an immersion blender until smooth. Sprinkle with chopped cilantro.
