Parfait with Caramelized Walnuts
Ingredients
- Walnuts 0 oz
- Sugar 0 oz
- Egg white 4 pieces
- Cream (40%) 5 fl oz
- Walnuts 1 tablespoon
- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
Cook the sugar until it turns brown and caramelize the walnuts.
Step 2
Spread on a baking sheet greased with vegetable oil and let cool.
Step 3
Place in a plastic bag and crush.
Step 4
Whisk the yolks and powdered sugar over a water bath until fluffy. Then continue whisking in cold water with ice (preferably).
Step 5
Add the walnuts and mix. Whip the cream and gently fold it into the walnut cream in portions.
Step 6
Add the oil (optional).
Step 7
Fill the molds and freeze for at least 4 hours.
