Papaya and Lime Sorbet
Ingredients
- Papaya flesh 8 cups
- Water 5 fl oz
- Sugar 5 oz
- Coconut Milk 0 fl oz
- Lime Juice 2 tablespoons
- Grated Lemon Zest 1 teaspoon
- Salt a pinch
Step-by-Step Guide
Step 1
Spread the diced papaya on a baking sheet and place it in the freezer overnight.
Step 2
In a saucepan, combine sugar and water. Bring to a boil and cook, stirring, for 5 minutes. Remove from heat and let cool. Meanwhile, take the papaya out of the freezer and let it sit for 15 minutes.
Step 3
Transfer the papaya to a blender and add the syrup, coconut milk, lime juice, zest, and salt. Blend until smooth.
Step 4
Transfer to an ice cream maker or container and freeze, stirring occasionally. You can also serve it immediately without freezing.
