Panna Cotta with Passion Fruit Jelly
Ingredients
- Cream 22% 20 oz
- Sugar 5 oz
- Gelatin 0 oz
- Vanilla salt 0 oz
- Water 5 fl oz
- Passion Fruit 5 oz
Step-by-Step Guide
Step 1
Prepare all necessary ingredients.
Step 2
Soak the gelatin (10 g) in cold water (60 ml).
Step 3
In a saucepan, combine the cream, sugar (60 g), and vanilla sugar. Bring to a boil.
Step 4
Add the swollen gelatin to the hot cream.
Step 5
Stir well.
Step 6
Pour into molds, strain through a sieve. Let cool for 30 minutes at room temperature.
Step 7
Soak the gelatin (4 g) in water (24 ml).
Step 8
In a saucepan, combine the passion fruit puree and sugar. Bring to a boil.
Step 9
Remove from heat and add the swollen gelatin. Stir well.
Step 10
Pour into molds through a sieve.
Step 11
Let cool in the refrigerator for at least 2 hours.
