Panna Cotta with Orange Sauce
Ingredients
- 10% cream 2 cups
- Milk 1 cup
- Sugar 5 oz
- Whole egg 1 piece
- Gelatin 0 oz
- Oranges 1 piece
- Butter 0 oz
- Vanilla salt to taste
Step-by-Step Guide
Step 1
Mix the heavy cream and pasteurized milk (as fresh as possible).
Step 2
Separate one cup of the mixture and soak the gelatin in it until it swells.
Step 3
Add 150 grams of sugar (preferably white) to the remaining mixture and heat it over a water bath, stirring, until the sugar completely dissolves.
Step 4
Set aside half a cup of the milk mixture, and to the remaining part, add the swollen gelatin along with the milk it was soaked in.
Step 5
Pour the yolk into a bowl and, quickly stirring with a fork or whisk, add the reserved milk mixture with sugar one spoonful at a time.
Step 6
Incorporate the egg mixture into the milk mixture, constantly stirring, until the gelatin is completely dissolved.
Step 7
Remove the panna cotta from the water bath, strain through a sieve, and pour into molds (cups, glasses, or dessert dishes — your choice) leaving about 1 centimeter from the top. Place in the refrigerator.
Step 8
For the sauce, place 50 grams of butter in a saucepan, add 50 grams of sugar (brown sugar can also be used here), and a coarsely chopped orange. Heat until the sugar melts.
Step 9
Take the set panna cotta out of the refrigerator and pour the warm (or not too warm) orange sauce on top.
