Panna Cotta with Dark Chocolate

Ingredients

  • Cream 22% 15 fl oz
  • 70% Dark Chocolate 5 oz
  • Egg white 2 pieces
  • Gelatin 0 oz
  • Vanillin 0 oz
  • Raw cane sugar 5 oz

Step-by-Step Guide

Step 1

Soak the gelatin in a small amount of water. Let it swell for 15 minutes.

Step 2

Pour 300 ml of cream into a saucepan, add sugar and vanillin. Heat over low heat, add broken pieces of chocolate, and heat until the sugar and chocolate are completely dissolved. Do not boil! Set aside to cool slightly.

Step 3

Add the yolks and remaining cream to the swollen gelatin, mix, pour into the chocolate mixture, and heat slightly again while stirring constantly. Again, do not boil.

Step 4

Place in a cold water bath and whip with a mixer on medium speed for a couple of minutes.

Step 5

Pour into molds and refrigerate until fully set. I left it overnight, but 3–5 hours will be sufficient.
