
Panna Cotta with Almond Sauce

Description
Panna cotta can be enhanced with an almond sauce. To prepare it, we will need 3 egg yolks, 75 grams of sugar, 5 grams of cornflour, 125 ml of milk, 125 ml of cream, and 5 grams of almond extract. Whisk the egg yolks with the sugar and add the cornflour. Meanwhile, bring the milk, cream, and almond extract to a boil. Then mix both mixtures and heat to 75 degrees Celsius, before cooling in the refrigerator.

- Sugar 5 oz
- Gelatin 0 oz
- Whole egg 2 pieces
- Vanillin 1 tablespoon
Step-by-Step Guide
Step 1
Take 350 milliliters of cream, add vanilla and sugar, place on the heat and warm it up, stirring constantly. Bring to a boil, but do not let it boil.
Step 2
In parallel, mix the remaining cream (50 milliliters) with the egg yolks and gelatin (the gelatin should be prepared in advance by soaking it in cold water for 15-20 minutes). Add this mixture to the heated cream, stir, and continue heating on the stove, stirring constantly, until the liquid reaches a boil, but do not let it boil.
Step 3
Then let it cool for about 15 minutes at room temperature. After that, whip it with a mixer on high speed, and to ensure our dish has enough airiness, do this over a cold water bath.
