Step-by-Step Guide
Step 1
Slice the bread into pieces about 2 cm thick.

Trim the crust, trying to minimize the amount of bread inside.
Step 3
Cut each slice into cubes of about 2 cm once the crust is removed.
Step 4
Pulse the bread cubes in a blender.
Step 5
Preheat the oven to 300°F.

Evenly spread the crumbs on a baking sheet so they dry uniformly in the oven.
Step 7
Bake the bread crumbs. The goal here is to dry the crumbs without browning them.

Bake the panko crumbs for 4-5 minutes.

Shake the baking sheet to ensure the crumbs dry evenly.
Step 10
Bake the bread crumbs for another 4 minutes.
Step 11
Remove the crumbs and let them cool for an hour. The crumbs should feel completely dry to the touch.

You can add paprika or your favorite spices to the crumbs.

Store the panko crumbs in an airtight container for several weeks at room temperature.
