Description

Never repeat my mistakes and do not use 'Activia' for pancakes, even if it is triple fermented!!! The pancakes do not rise, they turn out flat and stick to the pan even with oil! Use the most ordinary, inexpensive kefir and enjoy wonderful pancakes. I wrote 'kefir' in the recipe because that is correct.

Ingredients

  • Wheat Flour 10 oz
  • Chicken Egg 1 piece
  • Baking Powder 1 teaspoon
  • Fresh Berries 10 oz
  • Vegetable Oil 0 fl oz
  • 1% Kefir 15 fl oz
  • Sugar 0 oz
  • Vanilla salt to taste

Step-by-Step Guide

Step 1

First, thaw the wild strawberries.

Step 2

Warm the kefir until it is warm, pour it into a bowl, crack the chicken egg into it, and mix. Add 20 grams of granulated sugar and vanilla sugar.

Step 3

Add the flour and baking powder, mixing well to avoid lumps. If the kefir is well warmed, the baking powder will start to foam, making the pancakes fluffier. Gently fold in 100 grams of wild strawberries, being careful as they are delicate and can easily turn to mush. The batter should have a consistency similar to thick sour cream.

Step 4

Heat the pan, pour 2 tablespoons of vegetable oil into it, scoop the batter with a tablespoon, and pour it into the pan with some space in between to avoid one large pancake. After about 40 seconds, the pancakes will brown on one side, then carefully lift them with a spatula or fork and flip them to the uncooked side. Try to 'slap' the pancake onto the pan so that the batter spreads slightly on the surface, making them fluffier.

Step 5

For frying each new batch of pancakes, add more vegetable oil to prevent sticking.

Step 6

Place the finished pancakes in a bowl on paper towels to absorb excess fat.

Step 7

While the pancakes are frying, place the remaining wild strawberries in a pot with hot water, bring to a boil on the stove, and cook for 5 minutes. Add the remaining granulated sugar. Drain a little liquid into a cup, add 1 tablespoon of flour, and mix well until the lumps dissolve. Put the pot with wild strawberries back on the stove, bring to a boil, and pour in the juice with flour. Stirring, cook for 3 minutes until thickened. Remove from heat and let cool.

Step 8

Serve the pancakes with the prepared sauce, sprinkling with cinnamon if desired.
