Ingredients
- Lemon 1 piece
- Butter 1 tablespoon
- Sugar 5 oz
- Chicken Egg 1 piece
- Vanilla salt 0 oz
- Salt a pinch
- Wheat Flour 5 oz
- Cottage cheese 10 oz
- Clarified Butter to taste
- Strawberry 20 oz
- Cognac 2 tablespoons
- Lemon Balm to taste
- Powdered Sugar 2 teaspoons
Step-by-Step Guide
Step 1
Beat the butter with 2 tablespoons of sugar and vanilla sugar until fluffy.
Step 2
Grate the lemon zest. Mix it with salt, egg, flour, and cottage cheese, then incorporate it into the butter mixture and knead the dough. Let it rest for 20 minutes.
Step 3
Squeeze the juice from the lemon. Wash the strawberries. Make a puree from half of the strawberries by mixing it with lemon juice and the remaining sugar. Season the puree with cognac.
Step 4
Fry 12 pancakes in clarified butter and sprinkle with powdered sugar. Arrange the pancakes on 4 plates, 3 pieces on each.
Step 5
Drizzle all the pancakes with strawberry puree, and top with whole strawberries and lemon balm leaves.
