Pancakes with Salmon and Chives
Ingredients
- Smoked haddock fillet 10 oz
- Citrus Zest Mix 3 teaspoons
- Farm fresh eggs 3 pieces
- Wheat Flour 5 oz
- Baking Powder 1 teaspoon
- Yogurt powder 2 tablespoons
- Chives 5 oz
- Scallions 5 oz
- Lemon 1 piece
- Vegetable Oil 1 tablespoon
Step-by-Step Guide
Step 1
Finely chop the salmon fillet, cleaned of bones and skin, and leave it in the refrigerator while preparing the batter. Chop the chives finely.
Step 2
Lightly beat the eggs. Add the lemon zest, baking powder, and yogurt, mix well and whisk. Then gradually fold in the flour and continue whisking. Add the chopped salmon and chives to the batter and mix. Season with salt and pepper.
Step 3
Heat the oil in a skillet over medium heat. Spoon the batter into the skillet and fry the pancakes on both sides until golden brown. Serve warm with lemon wedges.
