
Pancakes with Liver and Red Onion

Description
Pancakes with liver are delicious, unusual, and very popular, so they don’t need any reform. But there’s always room for improvement: if you add red onion, a boiled egg, and a bit of butter to the liver filling, the stuffing will come alive with new flavors, exciting the taste buds with a measured dose of spiciness while simultaneously soothing them with its tenderness.
Ingredients
- Beef Kidneys 15 oz
- Butter 0 oz
- Garlic 2 cloves
- Chicken Egg 4 pieces
- Spanish onions 10 oz
- Salt to taste
- Ground Black Pepper to taste
- Thin Crepes 24 pieces
- Sour Cream to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Clean the liver of membranes and blood, then slice it.
Step 3
Place the butter in a cold skillet, set it over medium heat, and let it melt. Once the butter starts to bubble, sauté the crushed garlic until golden brown.
Step 4
Place the liver in the pan and sauté it over high heat until golden brown, stirring occasionally, for about 5 minutes. Cover with a lid and leave it on the stove with the heat turned off.
Step 5
Boil the eggs hard, peel them, and chop finely.
Step 6
Pass the liver, which has finished cooking under the lid, through a large grinder.
Step 7
Finely chop the red onion and sauté it in the juices left from frying the liver in the pan.
Step 8
Mix the liver mixture, eggs, and onions. Season with salt and pepper.
Step 9
Place the filling on one third of each pancake and roll it up like a cigar.
Step 10
Lightly fry the pancakes in butter and serve with sour cream.
