Ingredients
- Chicken Egg 6 pieces
- Milk 15 fl oz
- Sugar 5 oz
- Salt 0 oz
- Vegetable Oil 0 fl oz
- Wheat Flour 5 oz
- Corn Flour for Polenta 0 oz
- Eel 5 oz
- Shallot 2 pieces
- Ground Black Pepper 0 oz
- Butter 0 oz
Step-by-Step Guide
Step 1
Beat the eggs with a blender, adding milk and salt. Then add the flour and vegetable oil at the end.
Step 2
Let the resulting batter rest for 20 minutes, then strain through a sieve and fry medium-sized pancakes in vegetable oil.
Step 3
Prepare the filling separately. Cut the eel fillet and sauté it with 2 shallots, adding bay leaf and black pepper for a couple of minutes in soft butter.
Step 4
Wrap the filling in a pancake.
