Pancakes with Berries and Mascarpone
Ingredients
- Frozen Raspberries 10 oz
- Freeze-dried strawberry powder 1 cup
- Frozen Raspberries 1½ cups
- Sugar ¼ cup
- Corn Starch 1 teaspoon
- Meyer Lemon Juice 1 tablespoon
- Mascarpone Cheese Unagrande 6 tablespoons
- Thin Crepes 12 pieces
- Fresh Mint 12 sprigs
- Powdered Sugar 1 tablespoon
Step-by-Step Guide
Step 1
In a saucepan, combine the berries, sugar, and cornstarch. Bring to a boil, reduce the heat, and simmer for 5 minutes. Remove from heat and add lemon juice. Let cool.
Step 2
Spread 1½ teaspoons of mascarpone on each pancake and top with 2½ tablespoons of the berry mixture. Roll up and garnish each pancake with 2 tablespoons of the berry mixture on top. Before serving, dust with powdered sugar and garnish with mint.
