
Pancakes with Apple Jam

At the beginning of spring, there aren't many fresh fruits available, and those that are often look unnaturally plastic. However, apples never let you down. A baked apple, even if it starts off looking unappealing, wintery, and hard, transforms into a delightful treat on the skillet. All that's left is to add a pinch of spices and some sour cream for serving, to balance and enhance the rich and mellow apple flavor.
Ingredients
- Chicken Egg 2 pieces
- Salt 1 tablespoon
- Water 10 fl oz
- Milk 10 fl oz
- Wheat Flour 5 oz
- Vegetable Oil 2 spoons
- Green Apples 15 oz
- Cinnamon 0 oz
- Apple juice with pulp 5 fl oz
- Clove 1 piece
- Sugar 3 spoons
- Butter 0 oz
- Sour Cream to taste
Step-by-Step Guide
Step 1
Whisk the eggs with salt until frothy.
Step 2
Pour boiling water into the eggs while continuing to whisk. The foam will double in volume.
Step 3
Pour in the cold milk without stopping the mixer.
Step 4
Finally, sift in the flour and add 2 tablespoons of vegetable oil. Mix well to avoid any lumps, then refrigerate the dough for 30 minutes.
Step 5
Preheat a crepe pan — for the first crepe, you can grease it with vegetable oil, while the subsequent ones can be cooked without it. Pour a little batter into the pan and spread it evenly across the surface.
Step 6
Fry for about 2 minutes over medium heat, then flip and fry for another minute. Repeat this process with the entire dough.
Step 7
Peel the apples, remove the seeds, and cut them into 5 mm cubes.
Step 8
Melt the butter in a saucepan and add the apple pieces.
Step 9
Pour in the apple juice, add sugar, cloves, and cinnamon. Stir well.
Step 10
Cook over low heat, stirring constantly, until the apples resemble a jam. Be sure not to let them burn! This will take about 5–7 minutes.
Step 11
Fill the pancakes with jam, roll them up. Serve with sour cream or whipped cream.
