
Pancakes in Orange Caramel

Description
Ingredients are calculated for 2–3 people. I ended up with 9 pancakes. This recipe is perfect for a winter Christmas breakfast.
Ingredients
- Wheat Flour 0.7 cups
- Sugar ½ cup
- Chicken Egg 1 piece
- Milk 10 fl oz
- Butter 3 tablespoons
- Brandy 2 tablespoons
- Honey 1 teaspoon
- Oranges 2 pieces
Step-by-Step Guide
Step 1
In a bowl, combine flour, sugar (2 tablespoons), and the zest of half an orange. Crack the egg into the center of the mixture. While pouring in the milk, whisk the mixture continuously to form a batter. Stir until all lumps disappear. Add the melted butter and mix well.
Step 2
Cook the pancakes — they should be small in diameter. I used a pan with a diameter of about 19 cm.
Step 3
To make the sauce, squeeze the juice from the oranges. Mix the orange juice, zest, and liqueur.
Step 4
Pour the mixture into a cold pan, add sugar, and heat over low heat, stirring until the sugar dissolves. Then add the butter. Stir until the butter is completely melted and simmer for another 3–4 minutes.
Step 5
Place a pancake in the sauce, coat it on all sides, fold it in quarters, and move it to the edge of the pan. Then add the next one, and continue with 4 pancakes.
Step 6
Increase the heat and warm the pancakes for 1 minute. Serve the warm pancakes on a plate.
