  • Wheat Flour 20 oz
  • Dry yeast 1½ teaspoons
  • Salt to taste
  • Russian Cheese 10 oz
  • Salad Potatoes 3 pieces
  • Butter 0 oz
  • Vegetable Oil 1½ tablespoons
  • Sugar to taste

Step-by-Step Guide

Step 1

Mix the yeast, sugar, and flour in a glass and add water. Let it sit for 10–15 minutes. Sift the flour, make a well in the center, and add the dissolved yeast, salt, and water, kneading until a soft dough forms. Add sunflower oil to the dough and let it rise in a warm place. Knead the dough well.

Step 2

For the filling, boil the potatoes and mash them until smooth. Separately, crumble the Ossetian cheese and add it to the potatoes, along with some milk or sour cream, salt, and mix well.

Step 3

Roll out a flatbread about 0.5–1 cm thick. Place the prepared filling in the center of the flatbread. Smooth the surface of the pie, flip it over, and smooth it again. Repeat this 2–3 times until the pie takes on a rounded shape and even thickness.

Step 4

Finally, place the kartofdzyn on a baking sheet. Make a small hole in the center of the pie to allow steam to escape and prevent it from bursting.

Step 5

Bake until the pie is golden brown and a specific aroma develops.

Step 6

Serve hot, brushed with butter.
