Orange Tart with Yogurt Cream
Ingredients
- Chopped almonds 5 oz
- Sugar ¼ cup
- Coarse Salt to taste
- Wheat Flour 1 cup
- Butter 6 tablespoons
- Gelatin 2 teaspoons
- Cream 22% ½ cup
- Natural Yogurt 1½ cups
- Brown Sugar ¼ cup
- Oranges 3 pieces
Step-by-Step Guide
Step 1
In a food processor, combine almonds, white sugar, and 0.5 teaspoons of salt. Grind until finely chopped. Add flour and mix again. Then add diced butter and mix until crumbly.
Step 2
Press the dough into a round (approximately 20 cm) tart pan and smooth it out. Refrigerate for 15 minutes.
Step 3
Preheat the oven to 355°F.
Step 4
Bake the crust for 30–35 minutes until golden brown. Cool for 10 minutes and transfer the crust to a plate. Allow to cool completely.
Step 5
In a small bowl, combine gelatin and 2 tablespoons of water. Let it sit for 5 minutes.
Step 6
In a saucepan, heat the cream without bringing it to a boil. Add the gelatin and stir well.
Step 7
In another bowl, use a mixer to beat the yogurt, brown sugar, and a pinch of salt. While mixing, gradually add the cream with gelatin. Pour the cream over the cooled crust and let it set in the refrigerator for a couple of hours.
Step 8
Using a sharp knife, cut the zest from the oranges. Slice the flesh into thin rounds and carefully arrange them in a circle on the tart. Serve immediately.
