Ingredients

  • Spinach 15 oz
  • Onion 1 head
  • Oranges 2 pieces
  • Olive Oil 1 tablespoon
  • Chicken Broth 25 fl oz
  • Cream 22% 10 fl oz
  • Potato protein 3 teaspoons
  • Yogurt powder 6 tablespoons
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Peel the onion, finely chop it, and sauté in olive oil until translucent. Add the spinach to the pan, cover with a lid, and simmer for 5 minutes.

Step 2

Wash the oranges and dry them. Set aside a few slices for garnishing the soup, then zest the remaining oranges and squeeze out the juice.

Step 3

Place the spinach and onion mixture in a pot, pour in the broth, and add the zest and juice of the oranges. Bring the soup to a boil and cook covered on low heat for 10-15 minutes.

Step 4

In a separate bowl, dissolve the starch in the cream and mix until smooth. Pour the resulting mixture into the pot with the soup, season with salt and pepper, and blend the soup with a mixer. Return to heat and bring to a boil, stirring constantly.

Step 5

Remove the soup from heat, let it cool, and place it in the refrigerator for an hour. Before serving, add a spoonful of yogurt to each bowl, pour in the soup, and garnish with a slice of orange.
