Orange Posset with Lime Whipped Cream

Ingredients

  • Cream 22% 15 fl oz
  • Sugar 5 oz
  • Freshly squeezed orange juice 5 fl oz
  • 33% Cream 5 fl oz
  • Fine white sugar 0 oz
  • Lime Juice 0 fl oz
  • Red Food Coloring a pinch

Step-by-Step Guide

Step 1

In a saucepan, combine the 20% cream and 150 g of sugar. Place over medium heat and warm, stirring constantly. Bring the cream to a boil and reduce the heat to low. Cook for another 3 minutes. Remove from heat. Stir in the freshly squeezed orange juice without pulp. Let it cool. Remove the film that forms on the surface of the cream mixture. Pour the posset into dessert cups or bowls. Cover the cups with plastic wrap, making sure it doesn't touch the surface of the posset. Refrigerate for 4 hours.

Step 2

Only before serving the possets, prepare the whipped cream.

Step 3

Whip the 38% cream to stiff peaks (or any other whipping cream), gradually adding the fine white sugar. Add the fresh lime juice and a tiny drop of food coloring. Fill a pastry bag with the prepared whipped cream and decorate the possets.
