Ingredients

  • Wheat Flour 5 oz
  • Ground Almonds 5 oz
  • Poppy seed paste 2½ tablespoons
  • Sugar 10 oz
  • Farm fresh eggs 7 pieces
  • Lemon 1 piece
  • Butter 5 oz
  • Oranges 1 piece
  • Water 10 fl oz

Step-by-Step Guide

Step 1

Thinly slice 2 unpeeled oranges, place them in a pot with water and sugar. Stir and boil for 20 minutes until the peel is soft. Remove from heat and let cool.

Step 2

Grease a baking pan with butter. Arrange the most beautiful pieces of orange at the bottom. Remove the remaining pieces of orange, keeping the syrup. Blend them in a blender with the syrup until smooth.

Step 3

Mix the flour, almonds, and poppy seeds. Beat 3 eggs with 175 grams of sugar until creamy. Immediately add the orange puree and gently mix. Pour the batter into the prepared pan and bake for 40–45 minutes until golden. Let cool and invert the cake so that the oranges are on top.

Step 4

Beat 4 eggs with the juice of the orange and lemon, add 100 grams of sugar, butter, and zest, and place the bowl over a double boiler. Stir over low heat until the mixture thickens.

Step 5

Spread the finished orange cream over the cake.
