Description
Instead of orange puree, you can use a mixture of 120 grams of mango puree and 80 grams of passion fruit—this will create a dessert with a vibrant tropical flavor.
Ingredients
- 10% cream 15 fl oz
- Milk 5 fl oz
- Sugar 5 oz
- Vanilla extract to taste
- Gelatin 0 oz
- Orange Syrup 5 oz
- Corn Starch 0 oz
Step-by-Step Guide
Step 1
Preparing the cream. First, soak the gelatin (12 g).
Step 2
Combine the cream, milk, and sugar (90 g) in a saucepan and bring to a boil.
Step 3
Remove from heat, add gelatin, and blend with an immersion blender. Pour the panna cotta into glasses.
Step 4
For the orange jelly, soak the gelatin (3 g). In a separate bowl, mix the sugar (50 g) and starch.
Step 5
Warm the puree in a saucepan, add sugar and starch. Cook until translucent.
Step 6
Add the gelatin and blend with an immersion blender.
Step 7
Cool the mixture and pour it into cups as the second layer.
