Orange Muffins with Dried Cranberries

Description
Instead of grape seed oil, you can use any neutral vegetable oil. You can also partially or completely replace it with applesauce.
Ingredients
- Wheat Flour 5 oz
- Baking Powder 1½ teaspoons
- Brown Sugar 0 oz
- Ground Oats 1 cup
- Grapeseed Oil 0 fl oz
- Farm fresh eggs 2 pieces
- Orange juice concentrate 5 fl oz
- Dessert Yogurt 5 oz
- Orange zest 1 tablespoon
- Citrus Zest Mix ½ tablespoon
- Dried cranberries with sugar 5 oz
- Honey 1½ tablespoons
Step-by-Step Guide
Step 1
Mix the flour, baking powder, oats, and sugar.
Step 2
In a separate bowl, whisk the eggs, oil, yogurt, and orange juice.
Step 3
Slowly pour the liquid mixture into the dry ingredients, gently mixing. Add the zest, dried cranberries, and spices to taste (cloves, ginger, cardamom).
Step 4
Divide the batter among 12 muffin cups, filling them 2/3 full. Bake at 355°F for 25–30 minutes.
Step 5
Brush the warm muffins with honey.
