Orange Marmalade
Ingredients
- Lemon 1 piece
- Oranges 25 oz
- Lime 1 piece
- Sugar 20 oz
Step-by-Step Guide
Step 1
Thoroughly wash the citrus fruits under running water and dry them.
Step 2
Peel the zest and cut it into the thinnest strips possible. Place the zest in a colander and dip it in boiling water for 1 minute. Allow the water to drain and transfer the zest to a pot.
Step 3
Peel the oranges, lemon, and lime of all membranes, separate into segments, remove the seeds, and place the pulp in the pot. It’s best to peel over a bowl or the same pot where everything will be cooked to avoid losing juice while handling the citrus fruits.
Step 4
Add the sugar, stir, and cook the pulp with the zest for about 1.5–2 hours, starting on medium heat, then reducing to low after boiling, covered, stirring occasionally. The mixture should thicken properly and darken slightly, with the zest becoming soft and sweet. Towards the end of cooking, be particularly attentive to ensure the oranges do not burn at the bottom of the pot.
Step 5
Distribute the finished marmalade into sterilized jars and store in the refrigerator.
