Orange-Carrot Cold Soup
Ingredients
- Onion 1 piece
- Carrot 5 oz
- Vegetable Broth 10 fl oz
- Coconut Milk 0 fl oz
- Lemon ½ piece
- Ginger 0 oz
- Orange 1 piece
- Lime Juice 0 fl oz
- Olive Oil 0 fl oz
- Ground chili pepper ¼ g
- Ground Nutmeg ¼ g
- Salt ¼ g
Step-by-Step Guide
Step 1
Sauté the chopped onion (diced) and carrot (peeled and sliced) in olive oil, then add the vegetable broth.
Step 2
Add coconut milk, the zest of half a lemon, and ginger, and cook until the carrot is soft.
Step 3
Cool the soup, add the spices, orange juice, and lime juice.
Step 4
Puree and transfer to a cream whipper. Insert an N2O charger and shake vigorously.
Step 5
Refrigerate for 1-2 hours.
Step 6
Serve chilled.
Step 7
Garnish with any green vegetable.
