Description

If you want to make a gluten-free version, replace the wheat flour with polenta. The ginger jam, or rather, it's not quite jam. The English call this thing 'Stem Ginger in Syrup,' and you can find it at a common American grocery store. See the photo for what the jar looks like. The cake turns out very crumbly.

Ingredients

  • Oranges 4 pieces
  • Buckwheat Groats 0 oz
  • Chili jam 0 oz
  • Chocolate eggs 3 pieces
  • Butter 10 oz
  • Brown Sugar 5 oz
  • Chopped almonds 10 oz
  • Wheat Flour 5 oz
  • Cinnamon 1 teaspoon
  • Baking Powder 0 oz

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Cream the room temperature butter with sugar until smooth.

Step 3

Zest 2 oranges and squeeze out the juice.

Step 4

Grind the almonds into crumbs using a mortar and pestle or a coffee grinder.

Step 5

Beat in the 3 eggs one at a time into the butter-sugar mixture, mixing well.

Step 6

With the mixer running, add the almonds, zest, and 50 grams of ginger jam.

Step 7

Mix well using the mixer.

Step 8

With the mixer running, add the flour, buckwheat flour, and baking powder.

Step 9

Mix well.

Take a 20 cm diameter baking pan with removable sides. Grease with butter and add 1 tablespoon of flour. Shake the pan to evenly coat it with flour.

Pour the batter into the pan and smooth it out with a silicone spatula.

Bake for about 35-40 minutes. To avoid overbaking, check for doneness with a toothpick after 20 minutes. If the pan is exactly 20 cm, it should take about 45 minutes; if the pan is smaller, reduce the baking time.

Remove from the oven and cool for 10 minutes, then remove from the pan and place on a cake plate.

For the syrup, bring the juice of 4 oranges and 4 tablespoons of ginger jam to a boil in a small saucepan, reduce the heat, and simmer for about 10 minutes until it thickens into a syrup.

When the cake is completely cool, make small holes in it with a toothpick and spoon the syrup evenly over the surface of the cake.

Let it soak for about an hour.

Carefully slice.
