Onion Soup with White Wine

Ingredients

  • Onion 3 pieces
  • French Baguette 6 pieces
  • Butter 1 tablespoon
  • Olive Oil 2 tablespoons
  • Sugar 1½ tablespoons
  • Dry White Wine 5 fl oz
  • Chicken Broth 25 fl oz
  • Salt to taste
  • Hard Cheese 5 oz
  • Ground Black Pepper to taste
  • Thyme to taste

Step-by-Step Guide

Step 1

Slice the onions into thin half-rings.

Step 2

In a pot, heat the olive oil and melt the butter in it.

Step 3

Add the onions. Sauté for about 5 minutes, stirring.

Step 4

Reduce the heat, add the sugar, and sauté for another 15 minutes, partially covering with a lid.

Step 5

Season with salt and pepper to taste, add thyme, and cook uncovered for another 20 minutes until the onions turn caramel in color.

Step 6

Add the wine and broth, bring to a boil. Reduce the heat and simmer for 30 minutes until the soup thickens significantly.

Step 7

Preheat the oven to 390°F. Place the pieces of baguette on a baking sheet lined with parchment paper. Bake in the oven until golden brown.

Step 8

Pour the soup into heatproof clay dishes, place a piece of baguette on top, and sprinkle with cheese. Bake in the oven until the cheese is golden, about 5–7 minutes at 355°F. Serve immediately.
