Description

Don't forget about the spices. Let your imagination run wild. I didn't describe all the spices I add to this soup because they vary each time. Trust your taste)

Ingredients

  • Spanish onions 10 heads
  • Skin-On Chicken Breasts 3 pieces
  • Butter 0 oz
  • Sugar 2 teaspoons
  • Carrot 1 piece
  • Sliced Processed Cheese 15 oz
  • White Pepper (whole) to taste
  • Green peppercorns to taste
  • Salt to taste

Step-by-Step Guide

Step 1

First, we need a strong chicken broth. Take a large pot (I used a five-liter one), add the chicken breasts, one whole head of onion, and one carrot. Season with salt and pepper to taste.

Step 2

While the broth is cooking, prepare the onions. Slice the remaining nine large heads of onion into not-too-thin half-rings.

Step 3

In a saucepan, preferably non-stick, melt 40 grams of butter. Once the butter has melted, add a couple of teaspoons of sugar and mix well.

Step 4

Then, add the sliced onions to the caramel that forms. Season with salt to taste, and add both red and black pepper. You need to simmer it on low heat until it reaches a nice caramel color. The onions will reduce in volume by almost half. Be careful not to burn them.

Step 5

When the onions and chicken broth are ready, add the onions to the pot. Cook for about ten minutes.

Step 6

After that, dissolve the package of processed cheese in a small amount of broth and pour it into the soup.

Step 7

Cook for another 5–10 minutes.
