Ingredients
- Olive Oil 3 tablespoons
- Onion 1 head
- Wheat Flour 2 tablespoons
- Parsley ½ bunch
- Chicken Broth 0 qt
- Grated Pecorino Pepato Cheese 5 oz
- Salt to taste
Step-by-Step Guide
Step 1
Heat the olive oil in a large pot. Add the onion, sliced into thin half-rings, and cook over low heat, stirring, for 10 minutes until the onion turns bronze. Use a slotted spoon to transfer the onion to a plate and set aside.
Step 2
In the pot with the remaining oil, add the flour, mix thoroughly, and sauté for 2 minutes until the flour turns golden brown: continue stirring while slowly pouring in the broth. Return the onion to the pot and simmer over medium heat for 20 minutes.
Step 3
Remove the pot from the heat, season with salt to taste, and add finely chopped parsley. Serve in a soup tureen with grated Parmesan on the side.
