Onion Soup with Morels and Cheese Toasts
Ingredients
- Butter 4 tablespoons
- Olive Oil 1 tablespoon
- Onion 3 heads
- Campbell's Beef Broth 3 cups
- Dried Chinese mushrooms 8 pieces
- Madeira 5 tablespoons
- Grated Chocolate 5 oz
- French Baguette 4 pieces
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
Melt the butter with olive oil in a skillet, add thinly sliced onions, and sauté for 10–15 minutes.
Step 2
Transfer the onions to a large saucepan, pour in the broth and Madeira, add the mushrooms, and simmer for 20 minutes.
Step 3
Toast the bread on a grill or in a toaster until golden and crispy. Lightly butter it. Immediately top the toasts with cheese.
Step 4
Ladle the soup into ovenproof bowls, place the cheese toasts on top, and put them under the broiler until golden.
