  • Onion 5 lbs
  • Butter 4 spoons
  • Chicken Broth 25 fl oz
  • Cider 20 fl oz
  • Olive Oil 3 spoons
  • Thyme 16 stalks
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Thinly slice the onion. In a large pot, heat all the oil, add the onion, and cook covered for twenty minutes until it becomes soft and dark brown.

Step 2

Pour the onions with broth and cider, and add twelve large sprigs of thyme. When the contents of the pot come to a boil, reduce the heat, season the soup with salt and pepper, and let it simmer uncovered for twenty-five minutes.

Step 3

Remove the thyme sprigs from the pot, ladle the soup into bowls, and garnish with fresh thyme leaves.
