Ingredients
- Onion 15 oz
- Gruyère cheese 5 oz
- Wheat Flour 10 oz
- Butter 5 oz
- Olive Oil 1 tablespoon
- Buttermilk 5 fl oz
- Thyme 0 oz
- Baking Powder 2 spoons
- English Dry Mustard ¾ spoons
- Activated Baking Soda 1 tablespoon
- Salt 1¼ spoons
- Ground Black Pepper ¼ spoons
Step-by-Step Guide
Step 1
Peel the onion and cut it into thick rings; chill 80 grams of butter.
Step 2
Heat the remaining butter in a skillet along with the olive oil, add the onions to the foaming butter, and cook, stirring, for twenty-five minutes. When the onions turn golden brown, remove from heat, add thyme, half a teaspoon of salt, and pepper, and let cool.
Step 3
Combine the onion with 85 grams of grated cheese and spread it evenly over the bottom of a 24 cm diameter glass dish.
Step 4
Knead the dough: combine the flour, baking powder, baking soda, and the remaining salt using a food processor. Add 55 grams of grated Gruyère cheese, followed by pieces of cold butter, and mix until the dough resembles coarse crumbs.
Step 5
In a separate bowl, mix the buttermilk and mustard, then add it to the dough. Once the mixture becomes thick but is not yet a single ball, transfer it to a floured surface. Knead the dough, shape it into a ball, wrap it in plastic wrap, and let it rest for ten minutes at room temperature.
Step 6
Roll out the dough between two pieces of plastic wrap into a circle with a diameter of 25 cm. Remove one layer of plastic wrap, cover the onion-filled dish with the dough, take off the second layer of plastic wrap, and fold the edges of the dough inward into the dish.
Step 7
Bake the pie in the middle of the oven at 390°F for twenty-five to thirty minutes, until the crust is golden brown and firm.
Step 8
Let the finished pie rest in the pan for a couple of minutes, then cover it with a plate and flip the pie over. Serve warm.
