Step 1
Prepare all the ingredients. Preheat the oven to 265°F.

Cut the onion in half without peeling it.

Place the onion cut side down on a baking sheet lined with parchment paper and put it in the oven for 2–4 hours (the time depends on the juiciness of the onion) — it should turn into onion caramel.

Remove the skin from the roasted onion and transfer it to a pot.
Step 5
Pour water over the onion and place it on the heat. Bring to a boil, reduce the heat, and simmer for 40 minutes. The water should not boil vigorously; it should be a slow, gentle simmer.
Step 6
Strain the finished broth.
Step 7
Onion broth can be used instead of meat broth in various soups or sauces.
