Description
Fruits can be any, depending on the season: apricots, peaches, or even grapes. The balance of texture and moderate acidity is important. It's best to use slightly green, firm pears. If the apples are not likely to hold their shape, you can leave the skin on.
Ingredients
- Wheat Flour 10 oz
- Salt a pinch
- Olive Oil 5 fl oz
- Cream 22% 4 tablespoons
- Butter 5 oz
- Brown Sugar 5 oz
- Apple 2 pieces
- Pears 3 pieces
- Cognac 0 oz
Step-by-Step Guide
Step 1
Sift 300 grams of flour into a bowl, add 1 teaspoon of sugar, and generously salt. In a separate bowl, mix olive oil and cream. Combine the contents. Do not strive for smoothness and elasticity; just combine (the dough should be pliable and not stick to your hands).
Step 2
Line a ceramic dish with the resulting dough, forming low edges. Place in the refrigerator for 20–30 minutes.
Step 3
Peel the apples and pears, remove the cores, and slice them into generous pieces.
Step 4
In a pan, melt the butter and sugar, add cognac, let some alcohol evaporate, remove from heat, and stir in 2 tablespoons of flour.
Step 5
Place the fruits in the dish on top of the dough, alternating slices of apples and pears, pour the warm sugar-butter mixture over them, and put in the oven. Bake for about 40 minutes at 355°F.
