Old-Fashioned Tapioca Pudding

Ingredients

  • Water ¾ cup
  • Tapioca 0.3 cup
  • 3.2% Milk 2¼ cups
  • Salt ¼ teaspoon
  • Sugar 0.3 cup
  • Vanilla extract ½ teaspoon
  • Egg white 2 pieces
  • Ground Nutmeg to taste

Step-by-Step Guide

Step 1

In a small saucepan, combine water and tapioca and let sit for 30 minutes. Add milk and salt and bring to a boil. Reduce heat and cook for 30 minutes, stirring, until the mixture thickens.

Step 2

Beat the eggs with sugar. Gradually stir in 0.5 cup of hot tapioca. Transfer to the saucepan and cook for another 4 minutes, stirring, until the mixture thickens.

Step 3

Remove from heat and add vanilla. Transfer the pudding to a metal bowl and place it over ice for 15 minutes, stirring until cool. Cover with plastic wrap and refrigerate to chill.

Step 4

Spoon into serving bowls and sprinkle with nutmeg.
