Ingredients

  • Parsley 0 oz
  • Cucumbers 0 oz
  • Celery salt 0 oz
  • Green Peas 0 oz
  • Scallops 0 oz
  • Ginger 0 oz
  • Lightly Salted Red Fish 0 oz
  • Radish 0 oz
  • Whole egg 1 piece
  • Bread Kvass 5 fl oz
  • Spicy salami 0 oz
  • Salt to taste

Step-by-Step Guide

Step 1

Marinate the egg yolk in coarse sea salt with thyme and black pepper for 6 hours, then rinse gently.

Step 2

Peel the cucumbers and remove the seeds, then dice them into medium cubes. Peel the parsley root, dice it into medium cubes, and blanch in salted water. Peel the celery stalk, dice it, and blanch as well. Blanch and shell the green peas (fresh-frozen). Peel the ginger and cut it into thin strips.

Step 3

Quickly sauté the scallop meat on both sides. Cut the salmon into large cubes. Slice the radish into thin rounds.

Step 4

In a chilled bowl, arrange all the prepared ingredients, pour over the kvass mixed with mustard, season with salt, add black pepper, and garnish with basil leaves. Serve sour cream on the side.
