Ingredients
- Kefir 10 fl oz
- Skin-On Chicken Breasts 5 oz
- Sparkling water 10 fl oz
- Farm fresh eggs 2 pieces
- Cucumbers 5 oz
- Cilantro 0 oz
- Turnips 0 oz
- Dill 0 oz
- Scallions 0 oz
- Parsley 0 oz
- Rice Vinegar for Sushi 0 fl oz
- Bay leaf 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the eggs hard in boiling water for 10 minutes, cool them under running water; cut the chicken breast into small cubes and boil it in boiling water with a bay leaf, salt, and pepper for 3 minutes, then remove from heat.
Step 2
Dice the eggs, radishes, and cucumber into small cubes.
Step 3
Set aside 2 sprigs of dill for garnish; finely chop the green onions, cilantro, parsley, and remaining dill.
Step 4
Mix 300 ml of kefir, sparkling water, and vinegar.
Step 5
Combine the chopped ingredients, divide them into bowls, and pour the kefir mixture over them.
Step 6
Add salt, pepper, and mix again.
Step 7
Garnish the okroshka with a sprig of dill and serve chilled.
