
Okroshka with Apples

You can also add radishes if available. Okroshka made with apple broth is more delicate than that made with kvass.
Ingredients
- Chicken Egg 3 pieces
- Pickled Apples 5 oz
- Salad Potatoes 3 pieces
- Cervelat Sausage 10 oz
- Cucumbers 2 pieces
- Canned Sturgeon in Tomato Sauce 10 oz
- Scallions 1 bunch
- Dill to taste
- Salt to taste
- Water 0 qt
Step-by-Step Guide
Step 1
Prepare the apple broth in advance. Take a large pot, add the pre-soaked dried apples (to taste), and pour in water. Bring to a boil, then turn off the heat. Let it steep for at least 4 hours, but preferably overnight. You will need 1 liter of broth for 4 servings of okroshka.
Step 2
Now, let's move on to the okroshka. Wash the potatoes and boil them in their skins. Boil the eggs hard. Let them cool.
Step 3
While the boiled ingredients are cooling, chop the cucumbers and sausage into small cubes. Place them in a large deep bowl.
Step 4
Add the chopped eggs and potatoes, also diced into cubes.
Step 5
Add the canned bullheads in tomato sauce to the mixture.
Step 6
Finely chop the herbs and add them to the base.
Step 7
Season with salt and mix well. Then add the apple broth and mix again. Serve with sour cream or mayonnaise.
