Odessa-Style Crepes with Cottage Cheese
Ingredients
- Milk 0 qt
- Wheat Flour 15 oz
- Chocolate eggs 10 pieces
- Salt 0 oz
- Sugar 5 oz
- Vegetable Oil 15 fl oz
- Butter 5 oz
- Cottage cheese 10 oz
- 20% Sour Cream 5 oz
- Powdered Sugar 5 oz
- Citrus Zest Mix 1 piece
Step-by-Step Guide
Step 1
Mix the batter for the crepes using milk, flour, eggs, salt, and sugar.
Step 2
In a skillet with vegetable oil, cook crepes with a diameter of 24 cm.
Step 3
Spread butter on the crepes. Let them cool.
Step 4
Cut each crepe into 8 equal parts. First, divide into 2 parts, then into 4, and finally into 8.
Step 5
Prepare the filling. Pass the cottage cheese through a sieve, add sour cream, powdered sugar, and the zest of one lemon. Mix everything together.
Step 6
On the wide part of the crepe triangle, place about 10 g of filling (approximately 1 tablespoon). Fold into an envelope.
Step 7
Place the prepared crepes tightly together in a deep non-stick dish. Add the remaining butter. Bake in a preheated oven at 355°F for 10 minutes.
Step 8
Serve with sour cream!
