Ingredients

  • Wheat Flour 5 oz
  • Cottage cheese 5 oz
  • Oat flakes 15 oz
  • Natural Yogurt 5 oz
  • Citrus Zest Mix 1 tablespoon
  • Baking Powder 1 teaspoon
  • Meyer Lemon Juice 1 tablespoon
  • Sugar 3 tablespoons
  • Salt to taste
  • Olive Oil to taste

Step-by-Step Guide

Step 1

Grind one cup of oats into flour, mix with the unground oats, pour in two cups of hot water, and let it steep for 10 minutes.

Step 2

Whip the cottage cheese with yogurt, add a tablespoon of olive oil, lemon zest, and lemon juice.

Step 3

Add the oats and the previously mixed flour, baking powder, sugar, and a pinch of salt. Mix thoroughly and let it sit for 20 minutes. (Constantly allow the mixture to steep so that the oats swell, making the pancakes delicious and fluffy).

Step 4

The main trick is to fry them correctly. Place the batter in very small portions on the skillet, and fry the pancakes covered (!) on low heat (3–4 out of 10).
