Oatmeal muffins with raisins and nuts
Ingredients
- Oat flakes 1 cup
- 1% Kefir 1 cup
- Chocolate eggs 2 pieces
- Sugar 3 tablespoons
- Vegetable Oil 2 tablespoons
- Raisins 0 oz
- Walnuts 0 oz
- Baking Powder 1½ teaspoons
- Ground coriander to taste
- Ground Cinnamon to taste
Step-by-Step Guide
Step 1
Pour the oat flakes with kefir and let them soak for one hour.
Step 2
Wash the raisins and soak them in warm water for 15–20 minutes.
Step 3
Add the eggs, sugar, baking powder, spices, and vegetable oil to the swollen flakes and mix. Gradually incorporate the quick-cooking oat flakes. The dough should be quite thick. If it is runny, add more than 1.5 cups of flakes. Blend the raisins and walnuts in a blender and add them to the mixture. Spoon into molds and bake at 180–390°F for 30–40 minutes.
