Oatmeal Muffins with Dried Apricots

Ingredients

  • Oat flakes 1 cup
  • Farm fresh eggs 2 pieces
  • Oat flakes 0.7 cups
  • Kefir 1 cup
  • Dried Apricots 10 pieces
  • Sugar 1 tablespoon
  • Salt a pinch
  • Nutmeg a pinch
  • Cinnamon ½ teaspoon
  • Activated Baking Soda ½ teaspoon

Step-by-Step Guide

Step 1

Pour kefir over the oat flakes, mix well, and let sit for 10–15 minutes.

Step 2

Add eggs, baking soda, salt, sugar (I used a sugar substitute), cinnamon, nutmeg, and flour. Mix everything together.

Step 3

Chop the dried apricots into small pieces. Add to the batter.

Step 4

Pour the prepared batter into muffin cups, filling them 2/3 full.

Step 5

Preheat the oven to 355°F (350 degrees Fahrenheit). Bake the muffins for 20–25 minutes.
