Oatmeal Carrot Cookies with Rye Flour
Ingredients
- Coarsely Ground Rye Flour 1 cup
- Oat flakes 1 cup
- Roasted Peanuts 5 oz
- Salt a pinch
- Activated Baking Soda ½ teaspoon
- Grated Ginger Root 1 teaspoon
- Maple syrup ½ cup
- Vegetable Oil ½ cup
- Carrot 10 oz
Step-by-Step Guide
Step 1
Prepare two mixtures in different containers. Dry mixture: 1 cup of rye flour, ½ teaspoon of baking soda, a pinch of salt, 1 cup of oat flakes, 130 grams of lightly crushed roasted cashews, and grated carrot. Mix everything together.
Step 2
Syrup: ½ cup of maple syrup, ½ cup of vegetable oil, and 1–1.5 teaspoons of grated fresh ginger.
Step 3
If maple syrup is unavailable, you can add ½ cup of sugar, but then the mixture needs to be heated on the stove.
Step 4
Combine the two mixtures and bake at 355°F for 10–15 minutes.
