Description
Coarse flour is whole grain flour or flour made from whole wheat. Pasta flour is made from durum wheat. It is best to use oat flakes that contain bran. Before adding nuts and seeds to the dough, it is better to taste it for salt and sugar balance, and if it seems too sweet, add salt. The bread will only improve in flavor if you add dill or Provençal herbs.
Ingredients
- Coarsely Ground Rye Flour 2 cups
- Pizza Flour 1 cup
- Buttermilk 15 fl oz
- Oat flakes 0.7 cups
- Olive Oil 5 tablespoons
- Walnuts 5 oz
- Pumpkin seed oil 5 oz
- Sugar 2 tablespoons
- Ocean salt 1 teaspoon
- Activated Baking Soda 1 teaspoon
Step-by-Step Guide
Step 1
Soak the oat flakes in buttermilk, add salt and sugar, stir, and let sit for a while; you can even refrigerate it overnight.
Step 2
In a separate bowl, mix the flour with baking soda, add oil, and knead thoroughly until smooth. Pour in the buttermilk with oats and knead the dough.
Step 3
Add the nuts and seeds and mix thoroughly.
Step 4
Place the dough on a floured board and shape it into a loaf using gentle patting motions.
Step 5
Carefully transfer it to a greased baking sheet and place it in a preheated oven at 390°F. After half an hour, when a crust forms, you can brush it with olive oil or egg yolk. Bake for 1 hour 20 minutes.
