Oat-Cottage Cheese Cookies with Almond Crumble
Ingredients
- Oat flakes 5 oz
- Cottage cheese 5 oz
- Honey 0 oz
- Raisins 0 oz
- Vegetable Oil 0 fl oz
- Vanillin 0 oz
- Baking Powder 0 oz
- Chicken Egg 1 piece
- Chopped almonds 0 oz
Step-by-Step Guide
Step 1
Soak the oat flakes in a small amount of water (50-60 ml).
Step 2
Pass the cottage cheese (preferably homemade, 9% fat) through a sieve. Add the egg, vanillin, honey, and vegetable oil. Mix well with a fork.
Step 3
Combine the cottage cheese mixture with the soaked oat flakes (there should be no water in the flakes. If there is, drain the flakes in a sieve). Whisk together. Add the raisins (if they are dry, soak them in a small amount of slightly warm water) and mix thoroughly. Add the baking powder (or baking soda, activated with vinegar), and mix. Let the mixture sit in a warm place for 5 minutes.
Step 4
Form round cookies, spoon the mixture onto a baking sheet lined with parchment paper greased with oil.
Step 5
Bake in a preheated oven at 320°F for 15-25 minutes depending on the size of the cookies. Four minutes before they are done, sprinkle the cookies with crushed almonds.
