
Nutty Sabayon with Berries and Ice Cream

Ingredients
- Milk 5 fl oz
- Cream 5 fl oz
- Whole egg 15 pieces
- Hazelnut 0 oz
- White Chocolate 0 oz
- Sugar 5 oz
- Butter 0 oz
- Strawberry 15 oz
- Blackberry 15 oz
Step-by-Step Guide
Step 1
Bring the milk and cream to a boil, then pour it into a bowl with broken chocolate. Add 7 egg yolks and mix until smooth. Allow the mixture to cool and stir thoroughly. Repeat this process several times to achieve ice cream consistency. If you have an ice cream maker, do all of this in the machine.
Step 2
Add 50 grams of sugar to a saucepan, pour in 25 ml of water, and cook until you have a bubbling thick syrup. Once the syrup is boiling, add the nuts and fry them, stirring with a spatula; initially, the sugar will become dry, then it will turn into caramel and take on a chocolate-caramel color — at this point, remove the saucepan from the heat and add butter to the hot caramel. Mix well, spread the nuts onto parchment paper, and allow to cool. Once the caramel has hardened, break it into small pieces and place them in a blender. Turn on the blender and let it run for about five minutes to finely chop the nuts.
Step 3
In a blender bowl, combine 8 egg yolks and 80 grams of sugar. When a pale mixture forms, add the nut paste without turning off the blender, and continue to blend for another three minutes.
Step 4
In cognac glasses or small deep plates, place a generous handful of berries, drizzle with sabayon, and briefly caramelize with a kitchen torch. Top each serving with a small scoop of ice cream.
